Pumpkin Puree

I’ve been looking forward to making my own pumpkin puree since my boyfriend put the seeds in the ground. He planted them kind of early this year so I’m the lucky girl who got a fresh picked pumpkin!
I was so amazed at how easy it was! Now that I’ve got puree what goodies should I make?! This guy is a good size pumpkin so I ended up getting about 3 to 4 cups of puree out of him.
- 1 pumpkin cut into quarters (it makes the cooking process go a lot faster!)
- place them face down on a baking sheet
- add 1-2 cups water
- bake on 375F for about 40 minutes.
Once the little guy is fork tender, scoop out the meat and toss the chunks into a processor and press on! You might want to cut the pieces down some because I added mine in huge chunks and it took FOREVER!
Once you get the consistency you want you can strain it over night for a thicker puree!
Now, pumpkin pie, bread, soup, muffins, cheesecake?! The options are endless!
